-12 oz of Apple Chicken Sausage, Cut into 1/4 inch Pieces
-1/2 cup of Pecan Halves
-1/2 tsp of Sugar
-1/8 tsp of Cinnamon
-1/2 of a Red Onion, *Optional*
-2 cups of Radicchio, Thinly Sliced
-2 tsp of Olive Oil
-1/2 of a Lemon
-1/2 of a Pear, Thinly Sliced
-7 oz of Baby Spinach
-8 Tbsp of Light Blush Wine Vinaigrette (Dressing)
-1 tsp of Black Pepper, Ground
1. Coat a small saute pan with the olive oil over medium high heat. Lightly saute the pecans for 2 – 3 minutes, stirring. Add the sugar and cinnamon, and toss to coat, remove from heat.
2. Meanwhile, prepare a medium skillet with pan spray. Over medium heat, cook the apple chicken sausages until heated throughout, 10 minutes. Make sure to turn frequently while cooking.
3. Place the spinach in a large mixing bowl, add the red onion, radicchio and pear slices. Toss with the light blush wine vinaigrette and divide among six salad plates.
4. Top with the pecans halves, black pepper and a touch of lemon zest. Arrange the sweet apple chicken sausage slices over the salad.
