Ingredients

-16 oz of Apple Chicken Sausage
-4 oz of Low Fat Cheese
-4 Low Carb Tortillas (Soft Taco Size)
-1 Medium Apple
-1/4 cup of Dried Cranberries or Raisins

Instructions

1. Prepare a medium skillet with pan spray. Over medium heat, cook the Sweet Apple Chicken Sausages until heated throughout, 10 – 15 minutes. Slice each link lengthwise, use 2 slices per wrap.
2. Sprinkle cheddar cheese over each wrap (1/4 cup each). Place sausage slices over bottom rounded end with the apple slices and sprinkle with the dried cranberries or raisins.
3. Roll tightly and microwave for 30 seconds. Cut in half and serve immediately.

Ingredients

-4 oz of 99% Lean Ground Turkey
-2 oz of Low Fat Cheese
-2 Low Carb Tortillas (Burrito Size)
-2 Whole Egg
-6 Egg Whites
-1/2 of a medium sized Green Bell Pepper, Diced
-1/2 of a medium sized Red Bell Pepper, Diced
-1/2 of a small sized Onion, Diced *optional*
-1/2 of a California Avocado, Cut into 8 Pieces
-4 Tbsp of Salsa
-1 and 1/2 tsp of Taco Seasoning

 

 

Instructions

1. In a bowl, whisk together eggs and egg whites.
2. Spray a skillet with nonstick spray.  Scramble eggs (with salt & pepper, if using) over medium heat until desired readiness.
3. While eggs are cooking, dice up red pepper, green pepper and onion.
4. When eggs are done, remove from pan and cover.  Add ground turkey and taco seasoning to skillet. Cook on medium-high for 5-7 minutes.
5. Lay burrito or tortilla on a plate.  Layer scrambled eggs, peppers, onion, ground turkey, salsa, avocado and then finish off by sprinkling cheese. Then wrap burrito and cut in half.

*Meal Prepping? Wrap burritos in tin foil and place in the refrigerator (good for up to 5 days).

Instructions

1. Cut Apple Chicken Sausage into 1/2 inch pieces. Prepare a medium skillet with pan spray. Over medium heat, cook the Apple Chicken Sausages until heated throughout, 10 minutes.
2. In a large salad bowl combine mixed salad greens, strawberries, granny smith apple, walnut pieces, low-fat feta cheese and sausage.
3. In a small bowl, combine cider vinegar, honey and canola oil. Pour over salad and toss.

-2 Hard-Boiled Egg
-1/2 of a California Avocado, Cut into Pieces
-Hot Sauce, *optional*

 

Instructions

1. Place eggs in a small saucepan. Cover them with cool water by 1 inch. Slowly bring water to a boil over medium heat; when the water has reached a boil, cover and remove from heat. Let sit 12 minutes.
2. Transfer eggs to a colander; place under cool running water to stop the cooking. Eggs can be peeled immediately.  Transfer to a cutting board, and slice into quarters.
3. Combine your chopped eggs with the diced avocado in a small bowl or mug. Top off with hot sauce of your choice.
